Op zoek naar pure, ongepolijste Saperavi met intens donker fruit én elegantie. Winery 97 vangt in deze Unfiltered precies de energie van Kakheti: vol van smaak, zijdezachte tannines en een lange, overtuigende finale.

Wijngaarden en regio

De druiven komen van een geselecteerde wijngaard van 7 hectare in Ikalto, in het oosten van Georgië. Kakheti is de bakermat van Saperavi en levert hier rijp, diepgekleurd fruit met behoud van frisse ruggengraat, ideaal voor een moderne, zuivere stijl zonder houtinvloed.

Vinificatie en rijping

Met de hand geoogst, vervolgens een schilinweking van 10 tot 14 dagen en vergisting in neutraal roestvrij staal. De wijn blijft ook voor de rijping in rvs, op geselecteerde gisten, en wordt ongefilterd gebotteld. Wat betekent unfiltered en wat proef je daarvan. Ongefilterd bottelen behoudt de natuurlijke textuur en aromatische intensiteit, waardoor het donkere fruit voller en de finale langer aanvoelt. Serveer op 14 tot 18 graden. Alcohol 13 procent.

Druivensamenstelling

Saperavi 100 procent uit Ikalto, Kakheti. Saperavi is een teinturier, een druif met donker gekleurd sap, die bekendstaat om diepe kleur, rijp zwart fruit en een natuurlijke structuur die elegant kan aanvoelen wanneer je op rvs vinifieert.

Proefnotities en serveertips

Diep robijnrood. In de geur intense braam, zwarte pruim en wilde bessen. De smaak is vol en precies, met elegante tannines, een levendige kern en een lange, zuivere afdronk. Combineer met geroosterd of gegrild vlees, steaks, pittige Aziatische gerechten en met harde kazen zoals Gouda of Parmigiano.
