Natuurlijk Zoete Wijn Gerijpt in Amerikaanse Eikenhouten Vaten

Deze natuurlijk zoete wijn, gemaakt van 100% pedro ximénez-druiven, wordt gerijpt in Amerikaanse eikenhouten vaten. Met een alcoholpercentage van 15% biedt deze wijn een rijke en verleidelijke smaakervaring.

Productieproces: Het vinificatieproces van de pedro ximénez-druif, waar deze wijn zijn naam aan ontleent, begint in de zomer met het zongedroogd worden van de druiven om de suikers te concentreren en veranderingen in de chemische samenstelling en sensorische eigenschappen te bevorderen. Zodra de most is geëxtraheerd, wordt het versterkt tot 10% om de fermentatie te stoppen. Tijdens de daaropvolgende herfst en winter wordt de wijn geklaard en vindt de "desliado" plaats, waarbij bezinksel uit de wijn wordt verwijderd. Vervolgens wordt de wijn versterkt tot 15% en overgebracht naar de vaten waar hij gedurende 5 jaar een oxidatief rijpingsproces ondergaat via het solera- en criaderas-systeem.

Smaak: Stroperig, zoet, zijdezacht en verrukkelijk
