Al palato è morbido, caldo, ricco di tannini nobili e persistente.La selezione delle migliori uve, la resa in vigna volutamente tenuta bassa conferiscono a questo vino una grande struttura. Il Grosso Agontano matura da uno a due anni in piccoli fusti di rovere e quasi altrettanti in bottiglia prima di essere posto al consumo. Un periodo che conferisce a questo grande Conero quei profumi di marasca tipici del montepulciano che si fondono armoniosamente con quelli del legno. Adatto a lungo invecchiamento.
A tutto pasto, è indicato con carni alla brace, selvaggina e formaggi di grande stagionatura.
