This Sakai Takumi Ajimasa Deba is crafted from Yasuki White Steel #2 (Shirogami #2), a high-purity Japanese carbon steel known for exceptional sharpness and ease of sharpening. It is designed as a left-handed single-bevel knife intended for professional use, making it suitable for traditional Japanese fish preparation.
Left-handed Deba knives require specialized forging and sharpening processes, resulting in significantly lower production volume and higher craftsmanship demands. This makes them typically priced 30–50% higher than standard right-handed versions.
Its thick blade is designed for fish butchery tasks such as cutting through fish heads, bones, and filleting with stability and control.
The handle is made from Magnolia wood with a Buffalo horn bolster, offering durability and a traditional Japanese balance.
