Premium White Anchovies with Roasted Garlic by Patagonia Provisions

White Anchovies with Roasted Garlic from Patagonia Provisions combine delicate, mild-flavored white anchovies with sweet, caramelized roasted garlic for a sophisticated conserva that's perfect for garlic lovers. This is anchovies reimagined—elegant, approachable, and absolutely delicious.

What Are White Anchovies?

White anchovies (boquerones) are fresh anchovies marinated in vinegar rather than salt-cured, giving them a completely different character from the salty pizza topping most people know:

  • Mild and delicate: Clean fish flavor without the intense saltiness
  • Tender texture: Silky-soft and melt-in-your-mouth
  • Approachable: Perfect for people who think they don't like anchovies
  • Elegant appearance: Beautiful silvery-white fillets

The Magic of Roasted Garlic

Roasting transforms garlic from sharp and pungent to sweet, mellow, and almost buttery:

  • Sweet and caramelized: Roasting brings out garlic's natural sugars
  • Mellow flavor: No harsh bite, just rich, savory depth
  • Creamy texture: Roasted garlic becomes soft and spreadable
  • Perfect pairing: Complements the delicate anchovies beautifully

The Patagonia Provisions Difference

Patagonia Provisions creates delicious food that helps restore the planet. These white anchovies embody that mission:

  • Responsibly harvested: From sustainable fisheries using selective methods
  • Lower on the food chain: Small, schooling fish with minimal environmental impact
  • Nutrient powerhouse: Excellent source of protein, calcium, and vitamin B-12
  • Omega-3 rich: Heart-healthy fats in every bite
  • Sustainable choice: Enjoy seafood with a clear conscience

Tasting Notes

  • Flavor: Mild, clean fish with sweet, caramelized roasted garlic
  • Texture: Tender anchovies with soft, creamy garlic cloves
  • Finish: Rich and savory with lingering garlic sweetness
  • Saltiness: Balanced and refined, not overpowering

  • Garlic bread upgrade: Top toasted baguette with anchovies and roasted garlic for next-level garlic bread
  • Pasta perfection: Toss with spaghetti, olive oil, chili flakes, and fresh parsley
  • Caesar salad: Use instead of regular anchovies for a milder, garlicky twist
  • Pizza topping: Scatter over white pizza with arugula and lemon
  • Crostini: Spread roasted garlic on toast, top with anchovies and herbs
  • Conservas board: An elegant, flavorful centerpiece
  • Mashed into butter: Mix with softened butter for an incredible compound butter

Frequently Asked Questions

I don't like anchovies. Will I like these?
Probably yes! White anchovies are completely different from salty, brown anchovies. They're mild, delicate, and not fishy. The roasted garlic adds sweet, savory depth that makes them even more approachable.

What's the difference between white anchovies and regular anchovies?
White anchovies are fresh fish marinated in vinegar, making them mild and delicate. Regular (brown) anchovies are salt-cured, which makes them much saltier and more intense.

Can I eat the roasted garlic?
Absolutely! The roasted garlic cloves are soft, sweet, and delicious. Spread them on bread alongside the anchovies or eat them on their own.

Are these sustainably sourced?
Yes! Patagonia Provisions sources only from responsible fisheries. Anchovies are naturally one of the most sustainable seafood choices available.

How garlicky are they?
The garlic is roasted, so it's sweet and mellow rather than sharp or pungent. It adds wonderful depth without being overwhelming.

Can I use these in cooking?
Definitely! They're fantastic in pasta, on pizza, mashed into butter, or mixed into salad dressings. The roasted garlic adds incredible flavor to any dish.

How do I store them after opening?
Transfer to a covered container, keep submerged in the oil, and refrigerate. They'll keep for several days.

For garlic lovers and anchovy skeptics alike. These white anchovies with roasted garlic are mild, elegant, and sustainable—a Mediterranean delicacy that will change your mind about tinned fish.

It's How Wars End That Become Important Afterward
Format: Paperback
The twentiety century taught us a lot about wars and how they end. World War I showed us that making strong demands on the defeated (who didn't admit defeat to their own people) set the stage for the next big war. World War II was fought until the Unconditional Surrender of the Germans and Japanese. Something that thinkers still debate as having made them fight all that harder. VietNam was fought with no clear end in sight, and "another VietNam" entered our language. The first Gulf War was ended when Colin Powell and Bush II debated how to end the war. They stopped before they had to go in and see what the Sunni's, Shiite's and Kurds made of the power vacuum left by the removal of Saddam would have created. Bush II is learning about this now. This is the second revised edition of this book, originally published in 1971 and then updated in 1991 and now 2005 to reflect happenings in new wars. Still some of the old wars had interesting insights that I didn't know before, such as how Finland, originally on Germany's side against Russia, made a peace with Russia and kicked the Germans out before they became a Russian province. Great Book.

Complementary readings
Format: Paperback
There are already three good reviews so I will only suggest reading the following books instead of, or in addition to, this peculiar work: a) "War in human civilization" by Azar Gat; b) "War before Civilization. The Myth of the Peaceful Savage", by Lawrence Keeley; c) "How War Began" by Keith F. Otterbein; d) "War and Peace and War: The Rise and Fall of Empires" by Peter Turchin; and e) "War and the Law of Nations: A General History" by Stephen Neff.

Excellent short-book analysis
Format: Paperback
This short book is an outstanding analysis of how nations end wars, or accept peace. Ikle shows how governments often prefer obviously self-destructive courses rather then compromise peace terms. The problem is most acute when factional interests dominate strategy rather then a rational unitary interest. In such a circumstance, factions that benefit from continuing the war will accuse those pursuing peace of treason. Sadly, there is no equivalent derogatory word in English for those who pursue war to the detriment of their country. The book was first written in 1971, and most of the examples are from the two world wars. The work is still extremely relevant, and at 130 pages it's well worth the time. Highly recommended as a first book to read on ending war.
