大家都知道「精米」是為了除去酒米的蛋白質與雜質，留下最精華的心白部分，讓釀成的酒體不會有雜味。但風之森ALPHA8的精米步合程度達到100%，與現今的清酒市場可說是反其道而行。而且是過去大家不曾喝過的日本酒風味。
保留100%的玄米的理念在於：「讓原料米隨著不同地區可以有不同風味。」像是在關西的米因為溫度高，脂質會偏少；而在溫度低的高緯度區域脂質則會多一點，但作品經過在精米後，通常脂質都會被去除掉，所以地塊的特色不會被保存下來。而Alpha8保留了完整的玄米，讓原料米可以反應每個地區的特色，隨著溫度、水質、土壤等差異呈現出當地的大地之力。
酒造使用獨創的「Amorphous加熱製法」，透過改變澱粉的分子結構轉換蛋白質與脂質的味道，在玄米釀造技術上是一個大突破！

Great for shed organizing
