低塩で仕込んだ減塩タイプの再仕込醤油
一般的な減塩醤油は脱塩装置などを使って塩分を取り除く処理をします。一方、この「蓮華」は低い塩分濃度で仕込みをしているため、搾ってそのまま9.5%の減塩醤油になっています。しかも、再仕込醤油なのでうま味成分はたっぷり。減塩醤油が物足りなくて…という方におすすめしたい醤油です。
低塩で仕込むのは難しい
そもそも醤油は塩分によって雑菌などから守られています。低塩で仕込むことは雑菌などの汚染リスクも高くなるため、管理の方法がより難しくなります。この難題を乗り越えた立役者が大学時代から酵母の研究をしている発酵のスペシャリストである水野裕一さん。そして、久保田大樹さんです。
水野さんが宮島醤油に入社して最初の製造現場見学の時、「圧搾機から搾られている醤油を舐めたんですけど、本当においしかったんですよ」と、火入れをする前の搾りたての醤油の感動が忘れられないといいます。
胸をはれる醤油をつくりましょうよ！
宮島醤油では、この「蓮華」の前身の減塩醤油があったそうですが、核酸などで味を調えた商品だったそうです。「低塩で仕込む製法だと品質を一定に保つことが難しく、どうしても味を調整する必要がありました。でも、搾りたての醤油はとてもおいしいんです。その味のまま商品化したいと試行錯誤を繰り返しました」と、水野さん。
pHの管理や酵母を添加するタイミングなど、最適な条件を探っていき、最終的には6ヶ月熟成させた醤油を冬に再び仕込みなおす再仕込醤油の製法を経て5月末に圧搾する製法に行きついたそうです。
おかげで、9.5%の減塩醤油でうま味成分である窒素は2.3％の品質に。この2.3％のうま味量は、醤油の中でもかなりのトップクラス。減塩醤油なのに、しっかりとうま味がある、そんな醤油に仕上がっています。

Dog approved.

I’m a 70 lbs Goldendoodle (supposed to be 65, don’t ask) and I love cheese. Real cheese. Sharp cheddar with sourdough bread is my dream, but apparently I’m “on a health journey,” so my people bought me this instead.
Does this bone actually taste like cheese? No. I am not fooled.
Do I still enjoy chewing it loudly while my humans are trying to watch TV? Absolutely yes.
This bone satisfies my need to chew and my emotional desire for cheese-adjacent activities. It keeps me busy, saves the furniture, and lets me crunch dramatically during important dialogue scenes. The yellow color is nice — very cheese-coded — although some cheeses are white, so just something to consider for future versions.
