Bước đầu tiên cũng là bước quan trọng nhất trước khi bắt tay vào làm một chiếc bánh chính là việc lựa chọn loại bột mì thích hợp để đạt được chất lượng như ý. Trên thị trường hiện nay đang phổ biến các loại bột mì như bột mì số 8, số 11, số 13 với mỗi loại có chứa hàm lượng protein khác nhau phù hợp với đặc trưng của từng loại bánh.

Nếu như bạn đang dự định làm bánh mì, đế bánh pizza hoặc các món bánh có kết cấu chắc, giòn cứng bên ngoài, dai bên trong thì nên chọn bột mì số 13 có tỉ lệ protein cao hay còn gọi là bột mì mạnh (strong flour) như Bột mì làm bánh mì Beksul 1kg

Bột này chứa đến 13g protein chiếm khoảng 24% giúp sản sinh ra càng nhiều sợi gluten và những sợi gluten này sẽ lớn dần, dài ra và dẻo dai hơn sau quá trình nhào bột, kết hợp với men nở thì món bánh sẽ càng dai hơn.

Cách làm bánh mì (2 bánh dựa trên chảo 700g, 3 bánh dựa trên loại chảo 540g)

Bước 1: Chuẩn bị nguyên liệu

Rây trước bột mì và bột sữa, làm nóng lò nướng ở nhiệt độ 200 độ C

Bước 2: Trộn bột

Cho nước vào bát rồi cho men khô vào hòa tan. Sau đó cho hỗn hợp bột mì và sữa đã rây vào nhào đến khi thành cục thì cho bơ vào nhào cùng đến khi mịn.

Bước 3: Lên men lần 1

Ủ bột trong tủ lên men ở nhiệt độ khoảng 27 độ C và độ ẩm 75% cho đến khi bột nở ra gấp 2,5 lần đến 3 lần (khoảng 60 phút đến 90 phút). Nếu không có dụng cụ ủ men thì bọc lại bằng ni lông và ủ men ở nơi ấm.

Bước 4: Làm chín bột

Cắt bột thành kích thước mong muốn và vo tròn, dùng ni lông bọc kín ở nhiệt độ phòng và để bột chín trong 10~20 phút.

Bước 5: Tạo hình dạng

Dùng cán lăn bột ra và dàn mỏng, sau đó cuộn lại và cho vào chảo bánh mì

Bước 6: Lên men lần 2

Chỉnh nhiệt độ tủ lên men ở nhiệt độ 35 độ C và độ ẩm 85%, lên men bột cho đến khi bột nở cao hơn chiều cao chảo bánh mì 1cm (khoảng 45~70 phút). Khi bắt đầu lên men lần 2, làm nóng lò ở 200 độ C

Bước 7: Nướng bánh

Nướng trong lò ở nhiệt độ 200 độ C khoảng 25~30 phút để bánh nở mềm.

I would have maybe given a better rating if they hadn’t lied about it being indestructible and recommended it for my dogs size range! It didn’t last the first day. However my dog may be a bit above average when it comes to his relationship with the balls! It’s an issue and he should probably be in a 12 step program of some kind. But it’s words that get used like that wich makes one appear to have not met the standard they wanted to! And maybe you don’t realize its impact on your overall until it’s far down the road! Can it be said better. Sure . Always room for improvement. But I would certainly remove the claim that’s just unreasonable to expect. If I wanted to use the benifit the does have to offer perhaps I would have said this ball is the closest thing to indestructible we’ve made so far. That’s statement tell me that they are not claiming it is but that it’s pretty tough! And it with out exact words tells you these guys must take honesty seriously or they wouldn’t have chosen to claim the accurate step below. And that lets me know that they hold themselves to a standard that they obviously respect their customers and they don’t take them for granted that’s integrity right there and there’s just not enough of it o. This world today! Seems to me that there are a few that are really close to it though. Maybe so close it’s worth the time to just go ahead and say it. If my gut feeling is right then it’s absolutely worth the time! Do I recommend the item absolutely it’s as tough as nails! And if you hate the squeaky part. Then don’t worry it won’t last long if your dogs like mine. Or you can take the little dude out when the dogs sleeping! And I’m going to add a star because when I look at it in the wider view I’ve been a bit harder then is justified I believe. Their. Our lives today are not as good as they once were and should be! And we only do ourselves the disservice and loss that comes from those choices. So look around and don’t hesitate to. All out that when you see it. Just try and come from a place that’s not to tear things down but to remind them of what they are really capable of! And how much we all need to hold ourselves to the highest standard we are capable of! And stop justifying excepting less! And then we see the results from that rather than the other.
